  • 1 block of soft tofu
  • Potato starch for dredging
  • 1 cup dashi
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • ½ tsp sugar
  • Daikon radish and scallion for garnish


  1. Cut the tofu into large bite size cubes
  2. Wrap the tofu cubes in paper towel and press with a cutting board for at least an hour (see blog post for extra instructions on this step)
  3. While the tofu is being pressed, grate the daikon radish and slice the scallions for garnish and make the dashi broth by heating up dashi, soy sauce, mirin, and sugar in a small pot
  4. Remove the tofu from the paper towel and dredge in potato starch
  5. Heat up a pan or wok with fresh canola oil to 350-375°F and gently place tofu cubes (fry in batches to avoid overcrowding)
  6. Once all sides are golden brown, remove tofu and rest on wired rack with a paper towel
  7. Plate fried tofu in the dashi broth and garnish with daikon radish and scallions
